Connecting Cultures Through Food at Identità di Fuoco
On the 30th of September, we had the honor of participating in Identità di Fuoco, a remarkable event dedicated to celebrating fire as humanity's oldest source of heat and the rich art of open flame cooking at Al Gatto Verde. Gathering the best chefs from around the globe, this occasion was a true testament to the power of food in bringing people together.
This event was extra special for AIW as our Culinary Director, Jessica, Chef Trainer, Nadiya, and Sous Chef, Fanta led our team alongside our graduates and ambassadors.
We were also honored to collaborate with Chef Salam Dakkak, who was named Best Female Chef in the Middle East & North Africa 2023. Together, we crafted a menu that celebrated the rich and diverse flavors of Nigeria, Palestine, and Lebanon.
It was an amazing experience to see our graduates showcase their skills in such an international setting, truly bringing to life what AIW stands for: sharing cultures and breaking boundaries through food.
One of the highlights of the day was watching our graduates step up at such a prestigious event. Seeing people from all walks of life enjoy the dishes we prepared and hearing their positive feedback was incredibly rewarding. The team worked hard to present dishes that combined passion and tradition, and it was amazing to see the results of their dedication being so well received.

A beautiful moment was when our graduate-ambassador, Blessing, delivered her heartfelt speech, sharing her journey with the audience.
Originally from Edo/Delta State, Nigeria, Blessing found her passion for cooking after moving to Modena and joining AIW. At the event, she shared her personal story with chefs and journalists, explaining how AIW helped her grow not just as a cook but as a person.
Roots has taken me far and I am going much farther!
- Blessing, Nigeria, AIW Ambassador
At Identità di Fuoco, Blessing shared her inspiring story with chefs and journalists alike, illustrating the profound impact our program has had on her life. From preparing her first dish, Egusi soup, at Roots to now working at the acclaimed Osteria Francescana, her journey showcases resilience, dedication, and personal growth.
Blessing embodies our values of boldness, patience, and sincerity. Her commitment to mentoring new trainees highlights her passion for cooking and her desire to uplift others. We are thrilled to have her represent AIW on such a global platform, and we can’t wait to see her continue to achieve great things.
Identità di Fuoco reminded us of the power of food to connect people and celebrate cultural diversity. Each dish we created was not just a meal, but a story of our passion and the bonds we share. We were honored to showcase the talents of our chefs and graduates, who poured their heart into every plate.
As we move forward, we look toward future opportunities to share our mission with the world, continuing to break down barriers and foster understanding through the universal language of food.
